Turkey burgers and ground turkey meatballs are a staple in my weekly meal plans, but I was looking to change up the recipe a bit to make it a little more exciting. Of course, ground turkey is a lean alternative to ground beef and can be used for a variety of meals: tacos, meatloaf, meatballs, burgers, etc. It’s very versatile.
Another healthy alternative to ground turkey is ground chicken. It can be used in place of ground beef, as well, and is a lean alternative just like ground turkey. Burgers, enchiladas, tacos, meatloaf, chili and so many other recipes are made leaner and with less calories when ground turkey and ground chicken are substituted.
Healthy Ground Chicken Spinach Burgers
1 pound ground organic white meat chicken
1 cup bread crumbs
1/2 cup almond milk
3 tablespoons grated red onion
2 cloves garlic, minced
2 cups spinach, finely chopped
2 stalks of celery, chopped
1/4 teaspoon cayenne pepper
dash of sea salt
black pepper, to taste
2 teaspoons coconut oil (can sub olive oil)
Add chicken to a mixing bowl and fold in milk, 1/2 cup bread crumbs, onion, garlic, spinach, celery, sea salt and pepper.
The mixture will be wet when patties are being formed. Place the remaining 1/2 cup bread crumbs on a cookie sheet.
Divide the ground chicken mixture into five patties and then coat the patties with the leftover bread crumbs. Heat the coconut oil in a large skillet over medium heat and cook the chicken patties until they are golden and cooked all the way through. This should take about five minutes per side, depending on the size of your patty.
These patties were very versatile. I ate them on top of salads and also with steamed spinach and sweet potato fries. The possibilities are endless!
